Submitted by Wayne Stokes This is a great variation on the "standard" fried fish. The most popular way of frying fish is to deep-fry (375 degrees) or fry in a skillet in about 1" of oil. Salt and pepper both sides of fish, spread mustard of your choice on the fish then dip in corn meal – flour – half cornmeal/half flour – dry batter mix (your choice although corn meal is best choice) and fry until golden brown. Options: Marinate fish in beer, milk or cream for about an hour before preparing (milk gives it a very nice mild flavor) For thicker crust. Dip fish in mixture of 1 egg and 2/3 cup of milk before dipping in coating and cooking. |
